So there is a certain model(s) I have a question about.
It says it fires d6 shots every turn...does that mean it's firing six separate shots every turn?
You might be laughing right now but hey, this is a beginners forum haha.

No. You roll a 6-sided dice (= D6) at the start of the shooting phase to determine how many shots you get this turn :)

That makes more sense!
Also, are crew members included in the cost or are they figured separate?

Each siege engine tell you how many crew are included in the base cost, some have 2 and some have 3. You can pay points for extra crew however.
