If a model comes with a shield standard will the +1 defense allready be included in the defense stat or do I have to add it on?

Example:

Morgul Knights have Shields and are defense 6 but do you add on the shield bonus, making them defense 7 or is it allready added on so they stay defense 6?

So for your example, morgul knights are D6.

Most of the time it's mentioned in their profile, such as
Shield: +1 defence. If the model equips a shield the D is increased from X to Y, and can use the shielding rule.
