When a model with multiple attacks is surrounded by multiple models and that model wins the fight, may it freely choose which model to try to hit against?

Also, on the same train of thought, could a model that has killed all the enemy models in base contact also attack the supporting spearmen/pikemen?

Yes. Page 28, ORB - Multiple Combats. One strike per attack, choose the models struck.

No. You can't choose supporting spear/pikemen, as they are not part of the combat. (Page 43, ORB - Spears)
