In the Charge Phase, unless one of the players chooses to go 'out of turn' by calling an Heroic Charge, the units are charged in any order the player with priority chooses. After he has charged with all the units he wishes/can, the other player charges with any units he wishes that have not already been charged.

In the Fight Phase the order of striking is Monsters, Cavalry, Infantry.

The rule doesn't promote the charging order but the fighting order.

eg: Cavalry fight before infantry, the results of the cavalry side of combat are worked out BEFORE the infantry strike back, so in theory there will be less troops fighting back. However if Legolas was in the infantry fomation they would fight at the same time. ie. Hits are worked out and applied as you would do for inf vs inf. The cavalry don't strike first in this case and therefore the infantry are more likely to cause more casualties.

Just to clarify for the original OP:

You can charge your models in the charge phase in any order you want.
In the fight phase each individual fight proceeds in a specified order (FMon, Mon, Cav, Inf).
It's important to remember that it's the individual fight that counts, you don't do all monsters across the board first, then more on to cavalry. I have seen people do this and it's quite interesting...

I've seen that as well.

I have also seem people that, for some reason, don't understand that there are separate phases for charging and fighting. I can't tell you how many times I have had to point out that Heroic Charge, Heroic Duel and Epic Strike are not all called at the same time.

Though I have issues with some of the loopholes in the system, I find the mechanics of the game great. The Move/Charge/Fight phases with their distinct boundaries in the turn, combined with the multi-step ( FMonster, Monster, Cav, Infantry) elements of the Fight phase really add a lot to the tactical depth of the game and working within those mechanics provides a lot of options.
