Yeah I probably wouldn't have taken Grima cause taking saruman and it's only 500pts so probably better to take the extra few dudes.

I think you are better off taking a 1 or 2 Shamans (and maybe 1 Captain) and then fill in with berserkers. Transfix opponents and let your berserkers do the killing

I'm going to play the exact same list today (I'd maybe switch Grima for some warriors though), so wish me luck

While berzerkers are nasty, they're on my "too expensive to field a horde of" list. 2 attacks/model are nice to have, but your army is going to be quite small and a lot easier to break. My opinion is that no, it wouldn't work. I ran 10 in a tourney last year (600 points) and this year I'm cutting it down to 6, maybe even 5 to increase my overall numbers.
