If several warriors fight in the same fight and one of them chooses to shield, and they win the fight, can the other warriors strike blows?

No. When there are multiple models on side of a fight, either all of them shield or none of them shield.

Yes. In which case, noone can shield.

If not all have shield then defend by shielding may not be declared. Is this correct? Or does the warrior without a shield resolve melee separately from the shielding group?

No. Either all models shield at the same time, or fight normally. If one model has no shield, noone can shield.
