It doesn't matter if it's two daggers, two swords, a combination or other weapons.
They have an amount of attacks in their profile and no special rules that they have an extra attack when using both weapons.

Indeed Erestor had 2 daggers, and only 2 attacks.
He probably uses both daggers in combat, but that doesn't mean he get's an extra attack.

No imrail they do not because Castellans do not fight with the dagger! they have one sword which they fight with.

The point being that it doesn't matter how many weapons a model has, it doesn't affect the attack value.

Exactly, Castellans 2 attacks are not because they fight with 2 weapons, as they only fight with one weapon (the sword).
