So if the leader of my Warband is the Knight of Umbar, can I take 6 Black Guard of Barad Dur, and 6 Watchers of Karna for him to lead because he is a leader from both Mordor and Harad or do I have to pick warriors from 1 or the other faction and not both....

You must pick a faction, each Warband can only be from one

But of course there is no rule against having warbands each from seperate factions in the same army such as harad, mordor, and angmar mixed if you so absolutely wish
