I have a couple of riders I picked upon ebay that are missing horses. Does anyone have any recommendations for replacements?

Ebob miniatures. Although they are slightly expensive. Alternatively, look out on eBay if you haven't already. I saw some spare LoTR horses not too LNG ago.
